Description:The Bière des Romands is a local beer from Switzerland that is featured on board SWISS after receiving support from over 3000 voters. The aim was to create a high-quality beer made in the French-speaking area of Switzerland known as Romandy with a trendy and catchy design in SWISS’ easily recognizable colours. The refreshing Pale Ale is made of 80% pale ale, 10% spelt, and 10% CaraPils, with a touch of citrus flavor. For practical reasons when handling on board, the beer is served in 330 ml cans instead of glass bottles. The reasons behind this decision are plenty, starting with the fact that cans are much lighter in weight and less fragile, there’s no need for a bottle opener, the material is robust and they also seal much tighter than bottles.
Function:The beer was developed as a co-creation between La Nébuleuse, SWISS, Retail inMotion, and thousands of beer lovers in the region and supported by a creative marketing campaign (https://www.switzerlandcan.ch/). The website aims to educate the public on the beer product development and involved them all along the decision-making process, such as choosing the type of malt, alcohol percentage, and type of hops with bitterness and aromas. The beer that received the most support was offered exclusively on all SWISS flights from/to Geneva for a duration of three months. After that, in order to raise awareness and increase the number of consumers, it was also launched in other retail channels.
Passenger Experience:SWISS passengers are pleased to have been involved in the development of this co-created product and appreciate the fact that they can have a taste of the final product exclusively on board. Moreover, featuring a local, yet popular craft beer brand that sees itself as a regional ambassador positively influences the onboard experience. We also published a fun and entertaining editorial and advertisement in the SWISS onboard retail Menu (“SWISS Saveurs”) to highlight the story and generate excitement.
Unique features:What makes it special is the fact that it has been developed by a “Suisse Romande” producer, voted by “Suisse Romande” citizens, and enjoyed by SWISS passengers. Moreover, it has been selected by public vote as the beer of Western Switzerland as an Exclusive Pale Ale.

Retail inMotion used its operations experience and IT knowledge to develop a loading planner system that greatly reduced waste while maintaining passenger choice onboard. What is special about the system Retail inMotion built for SWISS is that, in addition to analysing past consumption data, it also includes crew feedback on missed consumption. The dynamic machine learning algorithm then predicts future loading for both Economy and Business meals, thus enabling the airline to quickly respond to network development, as well as modifications in customer behaviour.
Function:Based on data science algorithm and overseen by the operations team, the Advanced Loading Planner System (ALPS) is able to process thousands of consumption and missed consumption data to predict future consumption. From the data cloud, the system automatically extracts and processes multiple variables such as route, departure time, and passenger number that influence consumption onboard. Over the first year, the machine learning algorithm continuously improved its forecast ability, plus the agile development method allowed many algorithm improvements that helped boost the success rate. With ALPS, SWISS is able to forecast and load perishable food products specific to flight parameters, hence no two flights (even to the same destination) are identical in the perishable food loading. With the dynamic loading, the number of products that were loaded decreased considerably over the past few months and the waste rate dropped accordingly. At the same time, sales and business class consumption did not decrease significantly, which goes to show that passenger choice has remained unchanged. The system is so versatile that we were able to apply it not only to the Economy onboard retail program but also to complimentary Business Class perishable products. Therefore, it is safe to say that SWISS is the first airline worldwide that loads Business class meals according to a data science algorithm.
Passenger Experience:Onboard sustainability has multiple components, some of which are less visible to passengers. Waste due to over-catering and expired products is not as visible to passenger. Yet the more sustainability becomes a priority within the airline industry, the more airlines will realise that reducing waste contributes not only to the bottom line but also to crew and passenger satisfaction.
Unique features:The success of this solution depends on quite a few variables, one of them being crew involvement. The faster crew feedback is integrated into the algorithm, the better the solution can estimate the size of the load. Involving the crew has been beneficial in the sense that the crew’s tracking rate for both Business and Economy consumption and reporting of missed consumption is much higher than at other airlines. In addition, the crew sees any shortcomings of the system firsthand so their input is essential in helping SWISS identify and deal with the bottlenecks. A second unique proposition that SWISS-ALPS embodies in comparison to similar offerings is that it was not created by traditional programmers; instead, it was “built in the field” and reflects the work of various operations experts with IT knowledge, as data science is often considered a bridge between IT and operations. On top of the dynamic machine learning algorithm, the system was created on the premise that it would be constantly improved, in accordance with the steps of Agile methodology, which would ultimately make it more efficient and effective.
Additional information:One could argue that the system was the right system for one specific airline. Yet Retail inMotion has already been able to apply parts of the system to another airline and is in the process of extending it to a stand-alone module. The combination of technology and human expertise does mean that it is more difficult to copy and scale, yet as this combination has been Retail inMotion’s competitive advantage since the beginning, we are looking forward to bringing ALPS to other airlines.

Unique features: All materials were thoughtfully selected to be the most sustainable options or using 100% recycled materials. During this landmark flight, no amenity items were wrapped in polybags but were instead wrapped with an FSC paper belly band.
Additional information: Further to this event, Etihad Airways has pledged to reduce its single-use plastic usage by 80% by the end of 2022.

Function:The plastic containers inside the Cube were replaced with FSC cardboard with a plant-based polymer coating, replacing the oil-based-plastic liner. The cutlery kits have been adapted to complement the specific meals and are only offered when required in order to maximise resource efficiency.
Passenger Experience:This eco-friendly product fully delivers on its sustainable goals and addresses the needs of environmentally conscious passengers. To highlight this important change, the look and feel of the product was altered. The full Cube will exist entirely out of renewable materials, no plastic was used.
Unique features:Cardboard inserts were successfully developed to deliver the same technical capabilities, strength and efficiency as plastic when used in a food processing environment. It’s the result of a dedicated R&D trajectory aligned with the circular economy pillars of the Ellen MacArthur Foundation.

Description:At the heart of the offer was a decision to standardise the meal offering and switch from trays of varied/multiple sizes to a half size but at the same time to offer larger food portion sizes of improved quality F&B. While other airlines have replaced their stainless steel cutlery in Economy Class, further investment was approved to improve the quality and increase the lifespan of our flatware. The flow wrap in our cutlery pack was replaced with an airlaid napkin that provides the look and feel of a linen product and at the same time protects the items inside. New sustainable plastics have been introduced, a great example is new wine glass which not only complements our wine offering but it also introduces a new era of materials in our equipment. Our main service ware continues to be recyclable thereby contributing to our efforts in sustainability.
Function:Quisine offers a sustainable concept in style. We have strategically reduced and standardised the size of our service tray to ensure consistency in our proposition and improve packing. All items have been specifically selected to be rotable and durable, thereby improving on product life cycles. Portion sizes and quality of meal has seen significant improvements. To further manage food waste, butter, chocolates and cheese were removed from the tray and offered at other service interactions through the flight. Butter is offered on demand, chocolates are offered with the hot beverage service. Cheese was reintroduced in the movie snack basket. However our offload checks indicated that the cheese and crackers was wasted in high volumes which resulted in discontinuation of this product. Customers travelling on longer flights can enjoy a wider selection of snacks including popcorn.
Passenger Experience:In the past, airlines typically loaded all meal components on the tray and assume that all customers will eat every single component. In reality it generated waste and did not promote healthy eating. Quisine is focused on reduction in inventory, promoting versatility in bits equipment range, improving product life cycle, minimising food waste, managing weight, optimising spend, whilst at the same time offering variety, vibrancy, better quality and enhanced food portions. It promotes healthy eating and intermittent snacking.
Unique features:Quisine offers a different and comprehensive approach to sustainability as described above, while enhancing the customer experience in the main cabin in all flight sectors. It reduces the size of the meal tray and removes equipment to reinvest any weight savings into larger and improved meal portions.
